Grandma’s Cheesy Holiday Casserole

Some recipes never really leave you. They hide in the background of your memory, tied to noisy kitchens, crowded tables, and the smell of something baking that told you a celebration was coming. This is one of those recipes. The kind that showed up at every holiday party, sliced into neat squares, always disappearing faster than anything else on the table. Warm, cheesy, rich, and comforting in a way only a grandmother’s cooking ever managed to be.

This dish was famous in my family for one simple reason: nobody could resist it. Layers of seasoned meat, tender pasta, and melted cheese baked together until everything became one perfect bite. Kids would hover near the tray pretending to help, sneaking extra pieces when no one was looking. Adults would swear they were only having “one small slice” before quietly going back for more. It wasn’t fancy food. It was love, baked and shared.

What makes this recipe special is its simplicity. No complicated steps, no rare ingredients. Just honest, filling comfort food meant to feed a crowd and leave everyone full and happy. It’s the kind of recipe that survives because it works every single time. You can make it ahead, bake it fresh, and even enjoy the leftovers the next day when it somehow tastes even better.

To make it, start with 500 grams of ground beef. Brown it in a pan over medium heat, breaking it up as it cooks. Season generously with salt, black pepper, and one teaspoon of paprika. Add one finely chopped onion and cook until soft and fragrant. Stir in two cloves of minced garlic and cook for another minute. Once everything is well combined, remove from heat.

In a separate bowl, mix 400 grams of cooked pasta. Short pasta works best, like macaroni or small shells. Add one cup of sour cream, one can of cream of mushroom soup, and half a cup of milk. Stir until creamy and smooth. Fold in the cooked beef mixture until everything is evenly distributed.

Grease a baking dish and pour the mixture in, spreading it evenly. Top generously with shredded cheese. A mix of cheddar and mozzarella works perfectly, giving you both flavor and that irresistible melted top. Use as much cheese as your heart tells you to. This was never a low-cheese recipe.

Bake in a preheated oven at 180°C for about 30–35 minutes, or until the top is golden and bubbling. Let it rest for a few minutes before slicing so the layers hold together. Serve it warm, just like grandma did, surrounded by people you love.

This recipe isn’t just food. It’s a memory brought back to life. One bite takes you straight back to childhood, to sneaking seconds, to laughter and full plates. Some dishes don’t need improving or modernizing. They just need to be remembered and made again.
