It\u2019s a pair of twisted, rope-like strands made of protein that help&nbsp;<strong>hold the yolk centered<\/strong>&nbsp;inside the egg. Think of it like a seatbelt for the yolk. The more visible the chalaza is, the&nbsp;<strong>fresher<\/strong>&nbsp;the egg actually is.<\/p>\n\n\n\n<p>Fresh eggs often have:<br>\u2022 Thick, cloudy whites<br>\u2022 Prominent chalaza strands<br>\u2022 Yolks that sit high and firm<\/p>\n\n\n\n<p>As eggs age, the whites become clearer and thinner, and the chalaza fades or disappears. So throwing out eggs because of visible white strands is the opposite of what should happen.<\/p>\n\n\n\n<p>That white material is&nbsp;<strong>not mold<\/strong>,&nbsp;<strong>not bacteria<\/strong>,&nbsp;<strong>not fertilization<\/strong>, and&nbsp;<strong>not spoilage<\/strong>.
